  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • ½ cup shredded mozzarella cheese (or feta for a Mediterranean touch)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C). In a large bowl, combine chicken pieces, zucchinis, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and toss to coat evenly. In a small bowl, mix dried oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Sprinkle the seasoning mix over the chicken and vegetables, then toss again to evenly distribute. Transfer the mixture to a baking dish, spreading it out in an even layer. Bake in the preheated oven for 20 minutes. Remove from oven, sprinkle shredded mozzarella and Parmesan cheese evenly on top. Return to the oven and bake for an additional 8-10 minutes, until cheese is melted and bubbly. Garnish with fresh parsley before serving. Serve warm and enjoy a healthy Mediterranean-inspired meal.

Notes

  • For a dairy-free version, omit the cheese or use a plant-based alternative. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Add olives or artichoke hearts for extra Mediterranean flavor.
