Method
- Preheat oven to 350° F.
- In a small bowl, mix lemon-pepper seasoning, paprika, garlic salt, dried rosemary, and cayenne pepper.
- Place the ribeye roast fat side up on a rack in a roasting pan.
- Rub the seasoning mixture evenly all over the roast.
- Roast uncovered in the oven for 1 1/2 to 2 hours until the internal temperature reaches 135° F for medium-rare or 140° F for medium.
- Remove roast from the oven and tent loosely with foil.
- Let the roast rest for 10 minutes before slicing and serving.
Notes
- Use a meat thermometer for accurate doneness. Letting the roast rest ensures juicier slices. Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
