Ingredients
  

  • 1-1/2 teaspoons lemon-pepper seasoning
  • 1-1/2 teaspoons paprika
  • 3/4 teaspoon garlic salt
  • 1/2 teaspoon dried rosemary, crushed
  • 1/4 teaspoon cayenne pepper
  • 1 beef ribeye roast (3 to 4 pounds)

Method
 

  1. Preheat oven to 350° F.
  2. In a small bowl, mix lemon-pepper seasoning, paprika, garlic salt, dried rosemary, and cayenne pepper.
  3. Place the ribeye roast fat side up on a rack in a roasting pan.
  4. Rub the seasoning mixture evenly all over the roast.
  5. Roast uncovered in the oven for 1 1/2 to 2 hours until the internal temperature reaches 135° F for medium-rare or 140° F for medium.
  6. Remove roast from the oven and tent loosely with foil.
  7. Let the roast rest for 10 minutes before slicing and serving.

Notes

  • Use a meat thermometer for accurate doneness. Letting the roast rest ensures juicier slices. Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
