Pioneer Woman White Chicken Chili: Irresistible Easy Recipe

Ingredients
  

  • 1 small yellow onion: chopped small
  • 1 tbsp olive oil
  • 2 garlic cloves: minced
  • 2 (14.5 oz) cans chicken broth
  • 1 (7 oz) can diced green chilies
  • 1½ tsp cumin
  • ½ tsp paprika
  • ½ tsp oregano
  • ½ tsp coriander (optional)
  • ¼ tsp cayenne (optional)
  • Salt and black pepper to taste
  • 1 (8 oz) Neufchatel cheese: cubed
  • 1¼ cups corn (frozen or fresh)
  • 2 (15 oz) cans cannellini beans: rinsed and drained
  • 2½ cups shredded rotisserie chicken
  • 1 tbsp lime juice
  • 2 tbsp chopped cilantro

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped yellow onion and sauté until soft, about 5 minutes.
  3. Add minced garlic and sauté for another 1 minute until fragrant.
  4. Pour in chicken broth and add diced green chilies, cumin, paprika, oregano, coriander, and cayenne.
  5. Stir to combine and bring to a simmer.
  6. Add corn, cannellini beans, shredded chicken, and cubed Neufchatel cheese.
  7. Stir occasionally until cheese is melted and chili is creamy, about 15-20 minutes.
  8. Add lime juice and chopped cilantro.
  9. Season with salt and black pepper to taste.
  10. Serve hot and enjoy your cozy, flavorful chili.

Notes

  • For a crockpot version, combine all ingredients except lime juice and cilantro in the slow cooker and cook on low for 4-6 hours. Add lime juice and cilantro just before serving. Store leftovers in the refrigerator for up to 3 days.
