Ingredients
  

  • 5 cups chicken breasts, cooked and cubed (or shredded)
  • 1 cup sour cream
  • 2 (10.75 ounce cans) condensed cream of chicken soup
  • 2 cups crushed Ritz crackers (about 1 1/2 rolls of crackers)
  • 1/2 cup butter, melted
  • 1 Tablespoon poppy seeds (optional)
  • optional 2 cups cooked rice

Method
 

  1. Preheat the oven to 350°F (175°C). In a large mixing bowl, combine the cooked chicken, sour cream, and condensed cream of chicken soup. Stir until well mixed. If desired, fold in the cooked rice for a heartier casserole. In a separate small bowl, mix the crushed Ritz crackers with the melted butter and poppy seeds. Spread the chicken mixture evenly in a greased 9x13 inch baking dish. Sprinkle the cracker mixture evenly over the top of the chicken mixture. Bake uncovered for 35-40 minutes or until the casserole is bubbly and the topping is golden brown. Let the casserole cool for 5 minutes before serving. Serve warm and enjoy this creamy, comforting dish.

Notes

For extra flavor, add sautéed onions or mushrooms to the chicken mixture. This casserole can be prepared a day ahead and refrigerated before baking. Leftovers store well in the refrigerator for up to 3 days.
