  • 3 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 tablespoon lemon juice fresh
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked grains brown rice, quinoa, or cauliflower rice
  • 1 cup roasted chickpeas optional for paleo or keto
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ½ red onion thinly sliced
  • ½ cup kalamata olives pitted
  • ⅓ cup feta cheese crumbled; optional for dairy-free
  • ¼ cup fresh herbs parsley or dill, chopped
  • 1 cup Greek yogurt plain; coconut yogurt for dairy-free
  • ½ cucumber grated, squeezed dry
  • 1 tablespoon lemon juice fresh
  • 1 garlic clove minced
  • 1 tablespoon fresh dill chopped
  • salt & pepper to taste
  • 3 tablespoon olive oil
  • 2 tablespoon lemon juice fresh
  • 1 teaspoon honey omit for Whole30
  • 1 garlic clove minced
  • ½ teaspoon dried oregano
  • salt & pepper to taste

Method

  1. In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper to create the marinade.
  2. Place the sirloin steak in the marinade, ensuring it's well-coated, and let it sit for at least 10 minutes.
  3. While the steak marinates, prepare the tzatziki by mixing Greek yogurt, grated cucumber (squeezed dry), lemon juice, minced garlic, fresh dill, salt, and pepper in a small bowl. Set aside.
  4. Prepare the lemon vinaigrette by whisking together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper.
  5. Heat a grill pan or skillet over medium-high heat. Cook the marinated steak for about 4-5 minutes per side or until desired doneness is reached.
  6. Remove the steak from heat and let it rest for 5 minutes before slicing thinly against the grain.
  7. Assemble the bowl by dividing cooked grains between serving bowls.
  8. Top with roasted chickpeas, cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, crumbled feta cheese, and fresh herbs.
  9. Place sliced steak on top and drizzle with lemon vinaigrette and a dollop of tzatziki sauce.
  10. Serve immediately and enjoy a fresh, flavorful Mediterranean steak bowl.

Notes

  • For a paleo or keto diet, omit the grains and use roasted chickpeas or cauliflower rice. Substitute coconut yogurt and omit feta for a dairy-free version. Adjust honey in vinaigrette for Whole30 compliance. Leftovers keep well refrigerated up to 3 days.
