Ingredients
  

  • 1 lb breakfast sausage (mild or spicy)
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, well drained
  • 1½ cups Bisquick baking mix
  • ½ tsp garlic powder (optional)

Method
 

  1. Set your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a large mixing bowl, combine the breakfast sausage, shredded cheddar cheese, thoroughly drained Rotel, Bisquick mix, and garlic powder if using.
  3. Using your hands, knead the mixture until all ingredients are evenly blended.
  4. Shape the mixture into bite-sized balls about 1 inch in diameter and arrange them on the baking sheet.
  5. Bake the sausage balls for 20 to 25 minutes until they turn a nice golden color and are fully cooked.
  6. Allow the sausage balls to cool for a few minutes before serving them warm alongside your favorite dipping sauce.

Notes

  • Make sure to drain the Rotel tomatoes well to avoid extra moisture which can affect the texture. Add chopped green onions or jalapeños to the mix for an extra kick if desired. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat in the oven or air fryer for the best results.
