Salmon and Asparagus Foil Packs Easy Delicious Recipe

This Salmon and Asparagus Foil Packs recipe is a perfect example of quick, flavorful 30 minute meals that are gluten free and keto-friendly. Ingredients
  

  • 1 pound (450g) salmon fillets, divided
  • 2 tablespoons vegetable broth or chicken broth
  • 1 1/2 tablespoon fresh lemon juice, or to taste
  • 1 tablespoon of your favorite hot sauce (we used Sriracha)
  • 4 teaspoons minced garlic (4 cloves)
  • Salt and fresh ground black pepper, to taste
  • 3-4 tablespoons butter, diced into small cubes (or ghee)
  • 2 tablespoons fresh chopped parsley or cilantro
  • 1 lb (450g) medium-thick asparagus, woody ends trimmed

Method
 

  1. Preheat your oven to 425ºF (220ºC).
  2. Cut 2 sheets of 14 by 12-inch (35 x 30 cm) heavy-duty aluminum foil and lay each on the countertop separately.
  3. Combine broth, lemon juice, and hot sauce in a small bowl.
  4. Season both sides of the salmon fillets with salt and pepper.
  5. Divide the salmon onto the aluminum foil near the center.
  6. Place trimmed asparagus on one side of the salmon following the long direction of the foil.
  7. Adjust salmon fillets' seasoning with more salt and pepper.
  8. Sprinkle minced garlic on top.
  9. Drizzle the broth, lemon juice, and hot sauce mixture generously over salmon fillets and asparagus.
  10. Divide butter pieces evenly among the foil packets, layering over salmon and asparagus.
  11. Wrap foil packets and crimp edges together, leaving some space inside for heat to circulate.
  12. Place salmon foil packs on a baking sheet, sealed side up.
  13. Bake in the oven until salmon is cooked through, about 9-12 minutes.
  14. Carefully unwrap the baked salmon foil packets.
  15. Drizzle with more lemon juice and garnish with fresh parsley or cilantro and a slice of lemon.
  16. Serve immediately and enjoy!

Notes

  • For extra flavor, you can add lemon slices inside the foil packs before baking. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently to avoid drying out the salmon.
