Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a mixing bowl, combine shredded chicken, buffalo sauce, ranch dressing, honey, minced garlic, and a pinch of black pepper. Mix until well combined.
Carefully slice the King's Hawaiian rolls in half horizontally. Place the bottom halves on the prepared baking sheet.
Spread the buffalo chicken mixture evenly over the bottom rolls.
Sprinkle the mozzarella and Parmesan cheeses evenly over the chicken layer. Optionally, layer cheese, chicken, then more cheese to lock in the chicken.
Place the top halves of the slider rolls over the cheese and chicken layers.
Combine melted butter with Italian seasoning and garlic salt, then brush most of the mixture over the top of the rolls, reserving some for after baking.
Cover the sliders tightly with foil and bake for 15-20 minutes until hot and melty.
Remove the foil and bake for an additional 5 minutes to brown the tops.
Allow to cool for a few minutes, then cut sliders apart and serve hot.
Brush the remaining butter mixture on top for a glossy finish if desired.
