Place the chicken, cubed potatoes, and carrots into a big food-safe zip-lock bag.
Pour in all the marinade ingredients, then seal the bag tightly.
Shake and massage the bag well to coat all the chicken and veggies evenly with the marinade.
Move everything out of the bag onto a sheet pan or baking dish, spreading it evenly for uniform cooking.
Put the pan into the oven and roast for 20 minutes until the chicken is fully cooked and the skin is nicely browned.
