Ingredients
  

  • 1 cup frozen sliced strawberries
  • 1 ounce white rum
  • ½ cup pineapple juice
  • 1 cup frozen pineapple chunks
  • 1 ounce white rum
  • ¼ cup pineapple juice
  • ¼ cup cream of coconut
  • Pineapple wedges for garnish
  • Fresh Strawberries for garnish

Method
 

  1. Add the frozen strawberries, white rum, and pineapple juice to your blender and blend until the mixture is completely smooth, forming the strawberry base layer.
  2. Distribute the strawberry mixture evenly into two glasses and rinse your blender to prepare for the next layer.
  3. Combine frozen pineapple chunks, white rum, pineapple juice, and cream of coconut in the blender, blending thoroughly until creamy and smooth, creating the pineapple coconut layer.
  4. Gently pour or spoon this pineapple coconut blend on top of the strawberry layer in each glass to achieve a beautiful layered effect.
  5. Top off your drinks with fresh pineapple wedges and strawberry garnishes as desired to add a colorful and tropical touch.

Notes

  • This recipe scales well if you want to double or triple it. For extra coconut flavor, swap white rum with Malibu. If you prefer a sweeter drink, add 1 ounce of simple syrup to each fruit mixture. Use canned cream of coconut and shake it well before measuring, as coconut milk or cream are different. Avoid fresh fruit; frozen works best. This can also be made into a virgin strawberry pina colada by omitting the rum.
