Ingredients

  • 6 ounces brie
  • 6 ounces Manchego cheese, sliced
  • 6 ounces sharp white cheddar cheese, cubed
  • 4 ounces goat cheese (cranberry goat cheese log recommended)
  • 9 ounces hot sopressata salame
  • 9 ounces genoa salame
  • 1 sleeve plain water crackers
  • 1 sleeve poppy & sesame crackers
  • 1 whole wheat baguette, sliced and toasted
  • 1/4 cup dried cranberries
  • 1/4 cup walnut pieces
  • 1/4 cup roasted almonds
  • 1/4 cup marinated olives
  • 1/4 cup apple butter
  • 1/4 cup cranberry sauce
  • 1/2 cup fresh arugula leaves

Method

  1. Remove cheeses from fridge at least 30 minutes before serving to come to room temperature.
  2. Slice any hard cheeses such as cheddar and Manchego before arranging.
  3. Arrange small bowls for spreads and olives on a large cutting board or serving platter.
  4. Add cheeses and meats evenly around the board.
  5. Place a few crackers artistically on the board; keep remaining crackers in a separate bowl.
  6. Distribute small handfuls of dried cranberries, walnuts, and almonds in open spaces.
  7. Fill the small bowls with apple butter, cranberry sauce, and marinated olives.
  8. Tuck fresh arugula leaves into gaps as a garnish.
  9. Serve immediately and enjoy.

Notes

  • Serving sizes vary: as an appetizer with others, serves 15-20; as sole appetizer, 10-12; as a grazable dinner with salad, about 6.
  • Adjust amounts based on guests’ appetites.
  • For food safety, don’t leave cheese board out more than 2 hours.
  • Cycle meats and cheeses every 30-60 minutes for longer serving times.
  • Use this recipe loosely; feel free to swap ingredients or eyeball amounts.
  • For best aesthetics, only place some crackers on the board and serve remaining crackers separately.
