The Easiest High Protein Flatbread Recipe for Busy Nights

This simple flatbread is perfect for an easy dinner or a quick weeknight meal. Packed with protein and super quick to prepare, it’s ideal for family dinners or a high protein recipe that everyone will love. The easiest high protein flatbread to whip up when time is tight!

Servings: 1 large wrap

Ingredients
  

  • 1 cup cottage cheese 250g
  • 2 eggs
  • Optional seasonings - salt pepper cajun spice garlic powder etc

Method
 

  1. Heat your oven to 180ºC with the fan on. Prepare a baking tray around 30 by 20 cm by lining it with parchment paper and lightly spraying with cooking oil.
  2. Place the cottage cheese and eggs into a strong blender and add any seasoning you like.
  3. Blend everything until perfectly smooth and even.
  4. Pour the mixture into your prepared tray, spreading it evenly.
  5. Bake in the oven for 20 to 30 minutes until the flatbread is firm and set.
  6. Take it out and allow it to cool for 10 minutes before peeling off the parchment and adding your favorite toppings.

Notes

  • This flatbread tastes best the day you make it because it can become rubbery if left out too long. Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm gently in a dry pan over low heat or microwave briefly (10–15 seconds) just to soften. Avoid freezing as the texture may change.
