Heat your oven to 180ºC with the fan on. Prepare a baking tray around 30 by 20 cm by lining it with parchment paper and lightly spraying with cooking oil.
Place the cottage cheese and eggs into a strong blender and add any seasoning you like.
Blend everything until perfectly smooth and even.
Pour the mixture into your prepared tray, spreading it evenly.
Bake in the oven for 20 to 30 minutes until the flatbread is firm and set.
Take it out and allow it to cool for 10 minutes before peeling off the parchment and adding your favorite toppings.
