Tin-Foil-Packet Nachos: Quick & Delicious Party Snack

Ingredients
  

  • 1 large bag of your favorite tortilla chips
  • 2 cups of shredded sharp cheddar cheese or mix it up with a blend of Monterey Jack and Colby
  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1 fresh, ripe tomato, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, thinly sliced (remove the seeds if you like it less fiery)
  • 1/2 cup of black olives, sliced
  • 1/2 cup of sweet corn fresh or frozen or canned
  • 1 cup cooked, shredded chicken or ground beef optional
  • Chopped cilantro, for garnish
  • Salt and pepper, to taste

Method
 

  1. Set your oven to 375 degrees Fahrenheit and let it warm up while you prepare the nachos.
  2. Lay out a large tin foil tray and spread a generous base layer of tortilla chips.
  3. Sprinkle half of the shredded cheese evenly over the chips to help everything stick together.
  4. Add the black beans, diced tomato, red onion, jalapeño slices, black olives, and sweet corn over the cheese layer. If you want, add the cooked chicken or ground beef on top.
  5. Cover the toppings with the remaining cheese, like a soft blanket covering a tasty bed.
  6. Season the entire tray lightly with salt and pepper to suit your taste.
  7. Place the foil tray in the preheated oven and bake for 10 to 15 minutes until the cheese is melted and golden brown.
  8. Take the nachos out of the oven and allow them to rest briefly before garnishing with a sprinkling of fresh chopped cilantro.

Notes

  • For a vegetarian option, skip the chicken or beef. Serve immediately for the best texture and flavor.
