Ingredients
  

  • 8 cups vegetable broth
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 4 cups cabbage cut into 1 inch chunks
  • 3 carrots cut into 1/2 inch bites
  • 3 ribs/branches celery cut into 1/2-inch bites
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 28 ounces diced tomatoes do not drain

Method
 

  1. Pour the vegetable broth into a large pot and add the chopped onion and minced garlic.
  2. Add the cabbage chunks, carrot pieces, celery slices, salt, pepper, oregano, basil, and the diced tomatoes with their juice, mixing everything together.
  3. Heat the mixture over high until it comes to a rolling boil.
  4. Lower the heat to a simmer and let the soup cook gently for 20 minutes, or until the cabbage and carrots are soft and tender.
