  • 1 cup grated zucchini
  • 1 cup grated carrot
  • ½ cup self-raising flour
  • 4 large eggs
  • ½ cup grated cheddar cheese
  • ¼ cup olive oil
  • 1 small onion, finely chopped
  • 1 clove, minced
  • Salt and pepper to taste
  • Optional: ¼ cup chopped fresh herbs (like parsley or dill) for added flavor

Method
 

  1. Set your oven temperature to 180°C (350°F) to warm up while you prep.
  2. Prepare an 8-inch square baking dish by lightly greasing it and lining with parchment paper.
  3. In a big mixing bowl, toss together the grated zucchini and carrot, then press out any extra liquid using your hands or a clean cloth.
  4. Add in the finely chopped onion, minced garlic, and herbs if you decide to include them.
  5. In another bowl, beat the eggs together with the olive oil and grated cheddar cheese until smooth.
  6. Combine the egg mixture with the vegetables and stir well to coat everything evenly.
  7. Slowly fold the self-raising flour into the mix, stirring just until everything is combined, then season with salt and pepper.
  8. Transfer the batter into the lined pan, smoothing it out into an even layer.
