Zucchini Garlic Bites: Delicious and Easy Recipe

Ingredients
  

  • 1 cup shredded zucchini drained well
  • 1 clove garlic grated fine
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives or 1 tablespoon dried chives
  • 1 tablespoon chopped fresh parsley or 1/2 tablespoon dried
  • 1 teaspoon chopped fresh basil or 1/2 teaspoon dried
  • 1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
  • pinch of salt and pepper
  • tomato sauce for dipping

Method
 

  1. Set your oven to 400˚F and prepare a baking tray by lightly coating it with olive oil or a non-stick spray.
  2. Grate the zucchini using a box grater onto a clean kitchen towel, then roll and squeeze the towel tightly to remove excess water.
  3. Grate the garlic finely using the smaller holes of your grater.
  4. Combine the shredded zucchini, grated garlic, egg, breadcrumbs, Parmesan cheese, chives, parsley, basil, oregano, and a pinch of salt and pepper in a mixing bowl, stirring thoroughly.
  5. Take a spoonful of the mixture and form it into small balls with your hands, then arrange them on the prepared baking sheet.
  6. Bake the zucchini bites in the oven for 15 to 18 minutes until they turn a beautiful golden color.
  7. Serve the warm bites alongside your favorite marinara sauce for dipping.

Notes

  • To freeze these bites, allow them to cool completely, then arrange them in a single layer on a baking sheet and freeze for one hour. Transfer the frozen bites to a freezer bag and store for up to 4 months. To reheat, bake frozen zucchini garlic bites at 400˚F for 10 to 15 minutes until crispy and heated through.
